Backyard Sour

Featuring: Honey I'm Home, Drink Pink

Ingredients

  • 1.5oz Honey I’m Home Gin
  • 0.5oz Mixbehave Drink Pink
  • 1oz Lemon Juice
  • 0.5oz Hibiscus Syrup (see below)
  • 1 Egg White OR Vegan Foamer [Ms Betters Bitters Miraculous Foamer]

Method

  1. Add all ingredients to shaker, shake hard without ice first (dry shake)
  2. Add ice then shake hard, but not for too long, to avoid overdiluting
  3. Double strain into a chilled Coupe

Garnish
Drop a dehydrated lemon wheel (or cut a coin of lemon peel) to float it on the foam. Alternately, drop a couple of drops of beet juice on the foam and create some designs in the foam with a cocktail pick.

Notes
A savoury and herbal pink sour with a strong white head of foam. Creamy in
texture, savoury and tart in flavour, with vegetal notes of nettle, beets,
rosemary and a long-lasting astringent hibiscus tea finish.

Hibiscus Syrup
Add dried hibiscus to boiling water. Strain out hibiscus once it has taken a deep red colour. Add equal parts hibiscus tea to sugar and stir until dissolved.
